There are not many regions with so vast sorts of wine like Slovenia. The influence of Mediterranean on the Slovenian Coast have made a wine of an excellent quality. When you will be tired, the Slovenian farmers will accept you in their cellars and offer you a glass of a good home-made wine with a typical food of the coastal region. You can take part in a ” šagra” local festivity – where you can dance.

Istrian Wine Turistic Way

The hills of Slovenian Istra are situated between the valleys of river Osp, Rižana and Dragonja, from the ancient Socerb and the hills of Črni kal. The hills of Šavrini are facing the sea from one side and facing the Karst on the other side. The olives and the grapes are the most common vegetables in the area, they were admired already from the Romans and Greeks.

Refošk and Malvazija - In this Istrian area they have been always better in producing red wine, because of the suitable ground and the influence of Mediterranean sun. The most famous red wine is Refošk, which is dense with a dark colour and it really became a symbol of the Istrian culinary tradition. Other common red wines from this region are Cabernet and Merlot. Apart from the red wines, the Slovenian Istra has good white wines of which the most common are Malvazija, Rumeni muškat (one of the oldest types of wines in the world), Sivi Pinot and Chardonnay.

Tourist Farm

Try something different! Once take a turning on the side-away and you will never regret. When arrived to the destination you will find it impressive. Only 3 km far from the border of Dragonja the tourist farm Kortina is opening to you the door to the yet untouched Slovenian Istria`s beauty. Kortina is like a precious pearl on the hills of Šavrini. It is situated in Krkavče, one of the most beautiful Istrian villages, with one of the most interesting architecture, history and art. In this place, where you are close and at the same time so far away from modern littoral towns, it is like the time has stopped. During all periods of the year you can experience the magic atmosphere of solitude and feel the silence of Mediterranean trees, through which a gentle fragrance of the sea is blowing. You are certainly going to be satisfied with our kitchen, which offers you a vast variety of typical Istrian food, made on recipes of aur grandmothers and prepared in our baker`s oven. Good food is always supplemented with good drink. The guests are offered carefully selected first quality wines. If you would like to be woken up in the morning by the sing of the birds, you can pass the night in Kortina. Have a bathe in our thermal swimming pool, which has a temperature of 20°C during all periods of the year. The water comes up on superficies from the deepness of more than 250 meters. This is a pleasant relax in the summer fever as also at any other time of the year. Playing golf on our very well kept field, playing basketball, football and bowling or taking a walk in the sole unique eucalyptus forest in Slovenia is a complete relax, that will make of your visit here an ideal picnic or holiday.

Osmice

The so-called osmice were established in Slovenia in the days of the Austrian Empire with a decree by Empress Maria Theresa which allowed the wine growers to sell the previous year`s wine surplus for eight days in a year, from whence comes the name. Nowadays you can find such osmice all over Istria many of them more akin to good country inns with a garden than wine shops.

Gastro

In Istria, food has always been prepared with a lot of imagination, effort and love. You can find dishes here which you cannot find anywhere else in Slovenia. The basic characteristic of Istrian cuisine, in which the influence of Italian cuisine can be felt, is in the skill of preparing a testy dish from few ingredients and a lot of imagination. Boiled food is preferred to baked. Plenty of aromatic spices and wild plants are used, with fish, pasta, wine vinegar, olive oil and wine as the essential ingredients in cooking. The menu offerings in coastal towns above all include seafood specialities from top-quality fish, shellfish and mollusks, such as sea-bream, gilt-head, sea frog, baked or grilled sole, scampi or mussels alla Buzara (in their own juice), fish soup, risotto with scampi or calamari, etc. Karst Prosciutto with olives, home-made cheese and tasty home-made sausages are served as a cold starter. Among home-made dishes, the well-known minestrone from Primorska, an excellent soup made from vegetables and bacon, is not to be missed, Istrian polenta (maize porridge), gnocchi, fusi, spaghetti in various styles, lasagna, etc. You can treat yourself to different rolls, fritule, krostrule, and other goodies.

Picking Olives

The Slovenian Istra is the northeast port where olives still shrine. Every year the tourists can join the traditional event of gathering olives in the suburbs of Izola, where they have the opportunity to see how the olives are gathered and where they can learn the techniques of making the olive oil. The local people will take care of the atmosphere with their hospitality, food and music. Tourists are usually impressed when they try typical istrian food (garlic bread, bakala, different cheeses, grilled vegetables, traditionally made olives, home made bread, red wine, white wine. After this unforgettable event every participant gets a diploma.

Wild Asparagus

The wild asparagus is a Mediterranean plant, which ripens in springtime. In Slovenia, wild asparagus grows on the eastern, southern and western slopes of the Šavrinsko Hill; in other words in the area stretching from the Karst to the coast, along the trails, footpaths, or on the edges of fields, meadows and woods. Asparagus is a thin plant of dark green-grey-brownish colour and grows up to 1.5 metre high. The asparagus look-alike: black bryony (Tamus communis) is very similar to asparagus. It is a green-coloured vine plant that can grow several metres high. You can find it from March till June. The remedial properties of asparagus and black bryony were already well known to our ancestor and inspired them to compose a few sayings in honour of the two plants. One of them goes: Asparagus and black bryony are the best godfathers of man`s blood. And it is true: asparagus »cleans« your blood, stimulates the urinary tract and so forth… Only the shoots of the plants are edible. The shoots should be picked when they are still soft, and cut into pieces (1-2 cm) Asparagus can be prepared in many ways. Most often it is fried with eggs and other ingredients, such as panceta – dried bacan, pršut-salted and dried ham, or sausages.
